Observation (CORRECTED DURING INSPECTION): Improper reheating procedures explained by staff. The hot holding units should not be used to heat up soups.
Corrective Action(s): Staff to heat soup up to 74C in the microwave before transferring into a preheated hot holding unit to be maintained at 60C or higher.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Noted sandwiches/wraps in cooler unit at 12C. Staff said that they had just put the sandwiches/wrap in the cooler unit within the last 20 minutes
Corrective Action(s): Return all sandwiches/wraps to functional cooler unit. Only keep out once sandwich/wrap for display purposes only with a label to indicate this to customers. Keep all sandwiches/wraps stored at 4C or less at all times.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Although the hand wash station was fully equipped with soap, paper towel, hot and cold running water, staff said that they use the reusable cloth towel (hanging from a cupboard handle) to dry their hands.
Corrective Action(s): Ensure staff use single use paper towel only to dry hands.

Observation: Display cooler unit for sandwiches/wraps was at 12C. Staff were aware of this and have already called a technician.
Corrective Action(s): Repair/replaces display cooler unit so it is capable of maintaining 4C or less. Do not store potentially hazardous foods in this unit unless able to maintain 4C or less.

Under counter coolers, small sandwich prep cooler and upright 2 door cooler unit all 4C or less.
Hot holding of soup 65C. See violation code 204 re: proper reheating
Premises does not have any freezers.
Good general sanitation.No obvious sign of pest activity noted at time of inspection.
Meat slicer appeared had just been used recently. Operator said it is taken apart all all parts a thoroughly cleaned and sanitized after each use.
Ice machine appeared clean with scoop stored upright with handle outside of the ice.
Chlorine sanitizer 100ppm. Ensure all reusable wiping cloths are stored in sanitizer solution when not in use.
High temperature dish washer achieved 71C (with thermolabel).
All foods appeared protected (ie. stored off the ground, covered..etc)
New manager has up to date foodsafe training.
