Observation (CORRECTED DURING INSPECTION): Quat sanitizer in spray bottle only had ~50 ppm detected
Corrective Action(s): Operator refilled spray bottle with fresh sanitizer solution at time of inspection; 200 ppm Quats detected. Ensure to change the solution in spray bottle more frequently, and use available test strips to monitor concentration.

- Quat sanitizer available at 200 ppm from main dispenser and in sanitizing compartment of 3-compartment sink
- 3-compartment sink properly set up for manual warewashing
- Walk-in freezer measured to be at -19C
- Walk-in cooler measured to be at 2C, Undercounter cooler meausred to be at 4C, Prep cooler inserts measured to be at or below 4C
- Hot holding units were above 60C
- Accurate thermometers available
- Temperature records well maintained
- Food storage practices satisfactory, all food stored off the floor and covered
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection
