Observation:
Ventilation canopy has heavy accumulation of grease and debris. Deep cleaning of hood is due for April 2022.
Corrective Action(s):
Clean baffles of ventilation canopy. This is needed so grease, dirt and other contaminants can actually be trapped, and to prevent a fire hazard.

Observation:
Two fly strips above hand washing sink observed to be full of flies.
Corrective Action(s):
Replace fly strips and ensure to follow your sanitation plan for daily, weekly and monthly cleaning to prevent flies to accumulate. Ensure the back door is closed or has a secured screen door if the back door is to remain open.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1. Ceiling tiles in kitchen need deep cleaning as they have accumulation of debris, grease and smoke.
2. All shelves in walk-in cooler require deep cleaning as they have grime and mould build-up. Operator informed that new shelves have arrived to replace the shelves in the walk-in cooler. A few shelves are still on route but have been delayed due to the holiday season and COVID.
Corrective Action(s):
1. Clean or replace ceiling tiles in kitchen to prevent debris, grease and other contaminants from falling into the food below.
2. Clean shelves in walk-in cooler. Start replacing the old shelves as soon as the new ones arrive.

Routine Inspection:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All coolers (walk-in, two prep, beverages) maintained at or below 4 degrees Celsius.
Note: one prep cooler is not in use for cold storage.
- All freezers (walk-in, 2-door) maintained below -18 degrees Celsius.
- Blade for veggie slicer observed to be placed in bleach solution at the time of inspection. Ensure to clean and sanitize veggie slicer after each use.
- Concentration of chlorine (bleach) sanitizer = 200 ppm. Wiping cloth stored in sanitizer solution - good.
- 3-compartment sink used for manual warewashing.
Person-in-charge was able to explain how manual warewashing is done in the facility.
Bleach available for manual warewashing.
Reminder to leave dishware in the sanitizer solution for at least 2 minutes before placing them to air dry.
- Dry storage room organized.
