Observation (CORRECTED DURING INSPECTION): Raw chicken stored above cucumbers in the Pepsi cooler. Raw chicken juices dripping on cucumbers.
Corrective Action(s): Cucumbers discarded. Issues with separation and food storage practices of raw meats in proximity to vegetables seen in previous inspections.
ALWAYS store raw meats below ready to eat products and vegetables in the cooler.

203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 3 pots of marinated stewed meats cooling at room temperature. one of the two pots measured <60C at the time of inspection (measured 41C).
Corrective Action(s): Contents of pot measuring 41C discarded (cooled longer than 2 hours).
Remaining 2 pots moved to ice bath in 2 compartment sink.

All hot potentially hazardous foods are to be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours of less. Sauce can be cooled rapidly using an ice and water mixture or ice wand after the sauce has sufficiently cooled (not when immediately removed from the heating unit).

Observation (CORRECTED DURING INSPECTION): Contents within the Pepsi brand sliding door cooler found to be >4C;
-various marinated raw meats (discarded voluntarily by operator)
-cooked chicken thighs (14.5C)
-raw white fish (9.9C)
-tofu (12.4C)
Corrective Action(s): All of the above noted products were discarded at the time of inspection.
Some whole vegetables moved to single door cooler.
ALL cold potentially hazardous foods must be stored <4C at all times.

Observation: REPEAT OBSERVATION: Raw meats stored uncovered and above ready to eat food products such as vegetables and cooked foods. Cucumbers found to be contaminated by raw chicken (refer to violation 201)
Corrective Action(s): Operator must mark shelves within the coolers to indicate storage areas for raw meats, raw seafood, cooked foods, and vegetables.
Raw meats and raw seafood must always be stored below ready to eat foods such as cooked food and vegetables.

Observation: REPEAT OBSERVATION: hood vent, within the 2 glass door coolers, and around the dry storage area found to have food debris and grease build up.
Food debris build up noted on handles of deep frier baskets and wok station's knobs
Corrective Action(s): Clean within the cooler units. Clean and organize the dry storage area. Have the hood vent professionally cleaned.
Clean various frequently touched areas such as handles and knobs.
This must be done on a more frequent basis.

Observation: Pepsi brand cooler unit not able to maintain ambient temperatures <4C at the time of inspection.
2 compartment warewashing sink corner not sealed (leaking)
Corrective Action(s): Cooler unit was emptied at the time of inspection.
Do not use cooler unit until it has been repaired and cleaned and is capable of holding ambient temperatures <4C.
Repair the 2 compartment sink so it is capable of being filled with water.
