Observation (CORRECTED DURING INSPECTION): Dishwasher registered 0 ppm chlorine residual after rinse cycle.
Corrective Action(s): Operator switched sanitizer supply to a new bottle at time of inspection. 100 ppm chlorine residual detected.
Please ensure to monitor your dishwasher daily by using your test strips.

Observation: Mouse droppings were found in one section of the dry storage cupboard storing disposable cups and lids.
Corrective Action(s): Operator has been actively monitoring and dealing with mouse problem. Weekly pest control servicing is in place. Exposed cups and lids were discarded at time of inspection. Remove droppings and disinfected affected area with a 1000 ppm bleach solution.
Please continue monitoring for pest activity on a daily basis and cleaning and disinfecting affected areas as needed.
Ensure to store all opened bags of dry ingredients in pest-proof containers with secure lids.

Comments

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 100 ppm in spray bottle
- After replacing sanitizer supply (see violation code 302 above), dishwasher registered 100 ppm chlorine residual after rinse cycle, detected at the dish surface.
- Walk-in cooler, sliding glass door cooler, and sandwich display cooler were maintaining temperatures at 4C or colder.
- Two-door freezer measured at -21C
- Soup was being heated for hot-holding at time of inspection. Ensure soup reaches boiling temperature (100C) within 2 hours before being held at 60C or hotter.
- All food stored off the floor. Ensure to store opened bags of dry ingredients in pest-proof containers/bins with secure lids at the end of each day.
- Operator has valid FoodSafe level 1 certification
- Weekly pest control is in place. Please continue monitoring for activity.
