Observation: Numerous live cockroaches found in sticky traps throughout the premises. approx 100+
Live cockroaches observed on electrical box trailing from the ceiling in the middle of the kitchen.
Corrective Action(s): Have professional pest control service the facility and have pest control report on site for review. Operator must keep pest control reports on site for inspection at all times in the future.
If pest control service does routinely provide reports, it is the facility operators responsibility to obtain it from the pest control service and keep it on site.
Operator must have professional pest control service inspect the facility prior to June 30.

Observation: Facility has grease and food build up as well as cockroach debris.
Wall around middle area handsink drain pipe must be filled
General sanitation needs significant improvement
Corrective Action(s): Conduct a deep clean of the facility as per sanitation violation. Develop a cleaning plan and checklist and train staff to be responsible for cleaning.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Grease and food debris build up observed in corners and joints on the floor and walls, on shelves and on electrical boxes and conduits.
Grease trap was observed to be full. water was dripping onto the floor.
Corrective Action(s): -Clean around all wire and flat shelves
-Clean under all wire and flat shelves
-Clean the kitchen area central electrical box
-Clean all wire and flat shelves
-Clean the top of both grease traps (kitchen and middle area). DO NOT STORE ANYTHING ON TOP OF THESE TRAPS
-Pull all fridges from the wall and clean behind them
-Clean under all shelves around the food processor

Conduct a thorough deep clean of the facility. All walls and surfaces must be grease free.
Have the grease trap pumped. This must be done on a more frequent basis.

Due June 29, follow up to be done June 30. Failure to comply may result in the issuance of closure orders and/or violation tickets.

Observation: 2 issues;
-grease trap is overflowing slowly and requires to be pumped
-pooling water around the dishwasher noted
Corrective Action(s): Have the grease trap pumped quarterly (every 3 months as current schedule is not adequate). Operator indicated that the facility had been serviced in March, meaning that the trap became full in 3 months.

Repair the floor in the back dishwashing area to ensure that there is no more pooling water
