Observation (CORRECTED DURING INSPECTION): Gravy hot held at ~48 degrees C.
Corrective Action(s): Staff reheated the gravy in the microwave to over 74 degrees C then transferred back to the hot holding unit. Ensure all hot potentially hazardous foods are stored at or above 60 degrees C.

Observation (CORRECTED DURING INSPECTION): Quats being dispensed from chemical dispensing station at the main 3 compartment sink at concentration well over 400ppm.
Corrective Action(s): After dispensing quats from the chemical dispensing station into the sanitize sink dilute with fresh water to 200ppm. Verify concentration with available test strips. Smaller items may be washed in the additional 3 compartment sink in the front where quats is being dispensed at 200ppm.
