- Both walk-in coolers have been cleaned - please maintain this! - Equipment doors and handles are now maintained in sanitary conditions - Ventilation hood baffles have been cleaned - Meat slicer OK. Potato press was being cleaned and sanitized at time of inspection. Ensure both pieces of equipment are taken apart to be properly cleaned and sanitized every 4 hours at a minimum or after each use. - Kitchen manager stated kitchen cleaning (by walk-in cooler/first aid area) will be completed by tomorrow. Good.
