B) Staff washroom door in kitchen was open at time of inspection.
Corrective Action(s): A) Obtain cover/sleeves for lights in food preparation area.
B) Install self closing hinges/device of staff washroom door in kitchen.

Observation (CORRECTED DURING INSPECTION): Noted squid thawing in sink with cold stagnant water.
Corrective Action(s): Ensure frozen potentially hazardous foods are thawed under cold running water or in cooler unit at 4C or less. Do not thaw in stagnant water.

Observation: Racks in 3 door cooler unit appeared to be rusty/dirty.

Comments

- All hand wash stations had soap, paper towel, hot and cold running water
- All coolers (3 door reach in wall cooler, upright 2 door in kitchen, sliding two door in kitchen, prep cooler, domestic cooler in dry storage, small cooler in dry storage...etc) less than 4C
- All freezer less than -18C (3 chest freezers in hallway, 3 upright one door freezers in office/dry storage)
- Hot holding of rice 64C
- Noted cooked potatoes being cooled properly, spread out on shallow tray. Ensure potatoes do not exceed cooling at room temperature for 2 hours and are transferred to cooler unit to cool from 20C to 4C within 4 hrs.
- Ice machine appeared clean with scoop stored outside of ice in a separate container
- Sanitizer in spray bottles and container with cloths submerged 100ppm.
- General sanitation satisfactory. No obvious sign of pest infestation. Back door to kitchen was closed at time of inspection.
- Low temperature dishwasher had 50ppm chlorine sanitizer
- Self closing doors have been installed on customer washrooms in hallway (located across ice machine and freezer units)
