Observation (CORRECTED DURING INSPECTION): 1. Food grinder was observed to have dried on food debris inside of grinding chamber.
2. Food debris observed on two knives stored near chopping block.
Corrective Action(s): Noted items were washed and sanitized at time of inspection. Ensure that all equipment and utensils are stored in sanitary condition to limit the potential for cross contamination. NOTE: This is a repeat violation. Further repeat violations may result in enforcement action.

Observation: Food debris, dust, and/or grease was observed in the following areas:
1. In dry storage areas on shelves and along walls (behind chest freezers, behind storage containers)
2. On central shelves in main cooking area
3. Along cook line (floor)
4. On shelving and walls of walk in cooler. Some minor dust accumulation on walk in cooler fans--please clean.
5. In dishwashing area (floor)
Corrective Action(s): Ensure that the above noted areas, along with any other hard-to-reach areas, are properly cleaned and sanitized. Food debris and/or grease may attract pest activity. Dust/debris located in the walk in cooler may potentially contaminate unprotected food items. Date to be corrected by: March 29, 2018.

Routine inspection conducted:

- Walk in cooler at 1 degree C
- Small cooler (front) at 2 degrees C
- Chest freezers at -19 to -27 degrees C
- Hot holding internal temperatures at 60 degrees C or more
- Wiping cloths stored in bleach water sanitizer at 200 ppm chlorine. Note: Bleach water sanitizer was prepared upon inspector arrival--inspection conducted shortly after restaurant opened. Please ensure that bleach water sanitizer is always available during operating hours.
- Hand washing sinks supplied with hot and cold running water, liquid hand soap, and single use paper towels
- Low temperature dishwasher measured 54 degrees C and 50 ppm chlorine in rinse residual at utensil surface
- No evidence of pest activity noted
- FOODSAFE requirements met at time of inspection*
*Reminder:As of July 29, 2013, FOODSAFE Level 1 certificates issued in BC will expire after 5 years. Existing FOODSAFE Level 1 certificates are valid until July 29, 2018.
