Observation (CORRECTED DURING INSPECTION): Sanitizer solution in spray bottle was no longer at concentrations of greater than or equal to 200ppm QUAT
Lack of sanitizer solution in sink.
CORRECTED DURING INSPECTION - Health Inspector filled sink with sanitizer solution and dumped solution from spray bottle and refilled it with new solution.

Corrective Action(s): Ensure third compartment of sink is filled with sanitizer solution daily.

Observation: Food Weigh scale found in washroom.
Shelving unit storing food equipment placed right next to mop sink.
Coffee equipment and single use accessories (Stir sticks and lids) are located under paper towel and liquid soap dispensing units. As staff wash hands the water from hands drips over these items. This has been discussed in the past.

Corrective Action(s): Relocate weigh scale. Food or food equipment is not to be stored in washroom.
Shelving unit is to be relocated to a more suitable location. This area is for cleaning the floor etc. and should not have dishware stored next to it as dirty water could spray onto cleaned equipment. Also duster and broom are stored behind shelving unit. This are is for cleaning items. Relocate shelving unit to an area that does not have dirty cleaning equipment or potential spray from mop sink.
Relocate coffee equipment from under paper towel dispensing unit and soap dispensing unit.

- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius (60 to 72 degrees Celsius observed)
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Three functional sink plugs available for use observed
- Proper re-heating methods observed for previously cooked food items - food items reheated in microwave then added to hot holding units after reheated
- Proper thawing techniques
- First In First out and date stamping methods observed in use
- Hair restraints in use
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Good hand washing practices observed - EXCELLENT WORK! - Staff observed to wash hands after handling cash for EACH customer.
- Vegetable slicers in good sanitary condition
- Staff Personal items kept separate from kitchen equipment

NOTE: Food Safety temperature record checks not recorded in correct area. Staff had recorded today's temperatures as tomorrow April 30. Ensure this logbook is filled out properly.
