Comments

Follow up inspection:
-Affected areas were cleaned to remove the droppings.
Note: A few droppings were observed below the dry storage shelves and beneath the curtain. The number of droppings was reduced however.
-Cleaning was done behind the in line coolers to remove the buildup. Good. The operator mentioned that they would clean this hard to reach area every month.
-Extra knives (currently not in use) were near the sushi bar and raw onions were stored in a pest proof container with a tight fitting lid.
-All food and equipment was stored at least 6 inches off the floor.

**Continue checking for signs of recent pest activity (rodent droppings, holes, ripped food, dead/live mice) each morning and evening and continue with pest control measures noted on previous routine inspection report. Ensure the clean up company performs deep cleaning each night.

A follow up inspection will be conducted randomly over the next few weeks to assess the sanitation and continuance of pest control measures.
