Observation: Temperature of food stored in the 3 door prep cooler is at 5-6 C. Air temperature is also at 5-6 C. Rice is at 9 C.
Corrective Action(s): Rice may not have been cooled properly and was discarded during inspection. Check the 3 door prep cooler air temperature regularly with accurate thermometer and make sure that all potentially hazardous are stored at 4 C or colder. Large 2 door cooler food temperature is at 4.6C - check seals on doors and check this cooler daily also.

Hand washing station has liquid soap and paper towels.
Reviewed cooling methods (ice water bath can be used).
Reviewed thawing methods - thaw in cooler.
Bleach is available to sanitize work surfaces.
Dishwasher has a final hot water sanitizing rinse (>71 C measured inside of the machine and >90 C measured at the gauge).
Food Safe certificates expire after 5 years. Certificates that were obtained before Sept 2013 now expire after 5 years.
Take the online Food Safe refresher course (www.foodsafe.ca) to renew the certificate for 5 years.
