Observation: - Chlorine bleach stored in a bottle labelled QUATS.
Corrective Action(s): - Do not use old chemical bottles to store different chemicals.
- Ensure that chemical bottles are labelled clearly.
- Do not mix chemicals.

Note: Employee advised that chlorine bleach is used in dishwasher area for general cleaning and sanitizing. Reviewed with employee to ensure that chemicals are not mixed. QUATS is used in all other areas of the kitchen and preparation areas to sanitize food contact surfaces and clean-in-place equipment.

- Food storage practices appear satisfactory. Storage is organized, food is protected from contamination.
- Interior of ice machine and beverage dispenser ice bin appears maintained in a sanitary condition. Ice scoops are stored in a clean container.
- Tongs and knives along prep line are stored in hot water (>60C) between uses.
- 200 ppm QUATS sanitizer available for sanitizing food contact surfaces.
- Dishwasher: 50-100 ppm chlorine residual.
- General sanitation (unless otherwise mentioned). Note: Operator advised that a cleaning company was hired to complete a deep clean a week ago. Operator advised that the company has been rescheduled to return next week as operator is unhappy that many areas were missed.
- No rodent activity noted at time of inspection.

*Previously mentioned outstanding maintenance deficiencies that have been corrected:
- Flooring in walk-in cooler #2 has been refinished. Surface is now smooth and easily cleanable.
- Floor hole in front of display cooler has been filled.
