Ceiling light in mop room has covers.
Floor sanitation on walk-in freezer and dry storage are good.
Timers are still being repaired but room temperature holding is currently managed by using white label stickers for discard time as well as manual clock posted on prep area.
Ice machine is cleaned.
Chlorine sanitizer in buckets were measured to be 50ppm, a larger bucket is available to store soiled clothes.
New manager onsite informed that she was told to keep chlorine sanitizer at 50-100ppm and change solution every 3 hours.
Informed her that corporate office confirmed by e-mail that chlorine sanitizer should be maintained at 100ppm in 13L buckets. Soiled clothes should be disposed of in separate bucket.
Food safety manual onsite indicates that minimum requirement is 50ppm chlorine and to replace solution if reading is below 50ppm or greater than 100ppm.
Note: Compact room repair from fire damage is almost complete.
