Observation: Food debris and grease build up was noted in hard to reach areas such as behind equipment and coolers.
Corrective Action(s): The facility should undergo deep cleaning to prevent further build up of food debris which can attract pests and potentially contaminate food. Date to be corrected by: June 28, 2021.

Comments

Routine health inspection conducted.

Temperatures:
- Preparation under-counter coolers: < 4C
- Walk-in cooler: 1C
- Walk-in freezer: -25C
- Hot holding units: >60C
- Patties in the hot holding unit had an internal temperature of 60C or above
- All units had accurate thermometers.

Sanitation:
- Hand washing sinks were adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- High temperature dishwasher achieved 81C at the dish surface after the final rinse cycle.
- Sanitizer dispenser dispensed 200 ppm QUATS solution. Test strips were available on site.
- 3-compartment sink was equipped with functional plugs.
- Ice machine was in good sanitary condition. Scoop was stored outside the chamber in a clean container.
- Coffee machines were in good sanitary condition.
- Knives in the knife rack were in good sanitary condition.

REMINDER: Utensils kept at room temperature should be replaced every 2 hours.

Storage:
- Food is stored at least 6" off the floor.
- Stainless steel racks are used for dry storage.
- Containers are labelled and dated.
- Raw eggs are stored on the bottom shelf. Ready to eat food items are stored on top shelves.
- Items are covered inside coolers.

Pest Control:
- No signs of pest activity noted at the time of inspection.
- Facility is monitored by a professional pest control company. Inspection reports are available on site for review.
- Tin cats were empty.

Administration:
- Manager and staff on site have Food Safe level 1 certification or equivalent.
- Permit is posted.
- Temperature logs are up to date.

COVID-19 Safety:
- Tim Hortons corporate COVID-19 safety plan is available on site.
- Staff are required to self screen at the beginning of each shift.
- Temperatures for all staff are taken and recorded.
- High touch surfaces are disinfected frequently.
