302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): QUATS sanitizer spray bottles x2 measured at almost 0 ppm QUATS concentration during time of inspection. Staff mentioned that they no longer have test strips on premises. Staff prepared chlorine sanitizer solution during time of inspection using Stera Sheen sanitizer packets (one 2 oz. packet mixed with 2 gals of water makes chlorine sanitizer solution). Chlorine sanitizer solution measured at 100ppm and was placed into both sanitizer bottles during inspection.
Corrective Action(s): Ensure test strips are available at all times to frequently check sanitizer concentrations (of both spray bottles and sanitizing solution in the 3-compartment sink).

Use stera sheen sanitizer (100 ppm chlorine concentration) to adequately sanitize all dishware in the 3-compartment sink, until the QUATS dispenser is repaired and able to dispense 200 ppm QUATS concentration.

Observation (CORRECTED DURING INSPECTION): Open can of pumpkin pure observed in walk-in cooler. Staff voluntarily discarded the can of food during time of inspection.
Corrective Action(s): Open cans of food can cause metal/chemical leaching into the food. Ensure all open cans of foods are transferred into food grade containers or discarded after use.

304 - Premises not free of pests [s. 26(a)]
Observation: Fruit flies observed in front service area and in back prep area. Staff mentioned they have noticed the fruit flies and garbages are taken out daily.
Corrective Action(s): Place non-chemical sticky ribbon fly traps throughout the premises to reduce fruit fly population. Monitor fruit fly population and if it worsens, contact pest control company.

Observation: QUATS sanitizer dispenser at sink dispensing <10ppm QUATS concentration. Dispensing nozzle observed with no QUATS solution.
Corrective Action(s): Repair nozzle so that it is adequately able to dispense 200 ppm QUATS solution to properly disinfect dishware in the 3-compartment sink and to fill sanitizer solution (at 200 ppm QUATS concentration) in spray bottles.

Routine Inspection Conducted

Observations

1. Temperatures:
- Walk-in cooler at 3C
- Walk-in freezer at -18C
- Glass-door freezer at front at -18C
- Topping inserts at 3C
- Thermometers available in cold-holding units

2. Sanitation:
- General sanitation of premises satisfactory except for above notes violations
- Hand washing stations in front service area, back prep area and in staff washroom adequately supplied with soap, paper towel, hot and cold running water
- Cleaning and sanitizing procedures of frozen yogurt machines discussed with staff during inspection. Staff mentioned that one machine is cleaned and sanitized per day (total of 7 machines) and that all machines are cleaned and sanitized in one week. Water is run through the machine until clear solution is dispensed and stera sheen solution (100ppm chlorine) is run through the machine. All parts of the machines are disassembled, cleaned and sanitized per week.
- Scoops for dry topping ingredients stored in a sanitary manner

3. Storage:
- All foods observed covered
- All foods stored at least 6 inches off the floor
