Observation (CORRECTED DURING INSPECTION): Internal food product temperatures of food products in inserts at front preparation cooler ~ 7 degrees C. Lower section internal food product temperatures ~ 6 degrees C. Ambient air temperature of lower section ~ 6 - 7 degrees C.
Corrective Action(s): Operator has adjusted temperature to a colder setting. Ambient air temperature now at 4 degrees C. Ensure cold potentially hazardous foods (e.g. cut vegetables) are stored at or below 4 degrees C.

Corrective Action(s): Ensure all raw potentially hazardous foods are stored away or below ready to eat foods/vegetables. Store all food products at least 6" off the floor.

Observation (CORRECTED DURING INSPECTION): Ambient air temperature of front preparation cooler with inserts ~6-7 degrees C.
Corrective Action(s): Operator has adjust temperature to a colder setting and now is at 4 degrees C. Operator's accurate indicating thermometer also shows 40 degrees F. Ensure preparation cooler is capable of storing cold potentially hazardous foods at or below 4 degrees C.

Corrective Action(s): Ensure all chemicals, cleaners, and similar agents are stored in a designated area away from food/food preparation areas. Ensure all these products are labeled clearly.
