Observation: 1. Slime observed on the condenser panel at the ice machine.
2. Grease and debris build-up observed on the wheels of both deep fryers. date to be corrected by: Today
3. Dust accumulated on the fan covers in walk-in freezer. Date to be corrected by: 2018/05/19
Corrective Action(s): 1.Empty out the ice and clean & sanitize the interior of the ice machine. Clean the ice machine more frequently to prevent biofilm occurring.
-Staff started emptying out the ice machine at the time of inspection.
2.Clean the wheels thoroughly. Regularly clean the wheels when cleaning the floor.
3.Clean the fan covers

Observation (CORRECTED DURING INSPECTION): Hydogen peroxide (Yellow) sanitizer observed in glass cleaner (Blue) spray bottle.
Corrective Action(s): -Ensure chemicals are stored in correctly labelled spray bottles.

Comments

-All handsinks except the drive-thru area handsink were supplied with hot & cold water, liquid soap and paper towels.
-All washrooms are adequately equipped.
-All cooling units were at 4C or below.
-All freezer units were at -18C or below except the under counter freezer storing raw patties, which measured at -8.1C with a probe thermometer. The freezer was almost empty at the time of inspection. Ensure the freezer can maintain temperature of -18C.
-Quats sanitizer measured at 200 ppm from the sink and the dispenser.
-Hydrogen peroxide sanitizer measured at 3500 ppm in spray bottles and at the dispenser.
-All hot held food items including the beef patties/chicken/fish fillets were measured at 60C or above.
-Chlorine measured 100 ppm from the dishwasher.
