Observation (CORRECTED DURING INSPECTION):
Dishwasher not dispensing adequate sanitizer solution. Chloring was measured at 0ppm at time of inspection. This may allow harmful bacteria to survive the dishwashing process and potentially result in foodborne illness.
Corrective Action(s):
Corrected during inspection: Tubing for sanitizer solution replaced by repairman during inspection. Chlorine re-measured at 75ppm.

Observation (CORRECTED DURING INSPECTION):
Handwashing sinks were being used to store plastic lids. Sink was not stocked with paper towels.

Staff should be washing hands regularly to limit spread of illness. Corrected during inspection.

Observation (CORRECTED DURING INSPECTION):
Foods inside of walk-in-cooler and freezer found open and not in enclosed containers. Potentially hazardous foods such as beef were found stored above raw ready-to-eat foods.
Corrective Action(s):
Separate raw meals from ready-to-eat foods such as fruit and vegetables. Make sure that food is stored in food-grade containers and covered.

Observation (CORRECTED DURING INSPECTION):
Ground beef seen being thawed at room temperature for over 2 hours. This puts foods at risk of supporting growth of harmful microbes at the surface of the food.

Corrected during inspection: ground beef was placed in fridge for cooling.

Observation:
General sanitation within walk-in-cooler and walk-in-freezer not good. Food debris built-up along the walls and on the floors under the shelving represent a cross-contamination hazard and may attract pests. Sides of prep coolers and tables need cleaning, as well as the ceiling tiles and diffusers inside the kitchen overlooking food prep areas.

Clean the mentioned areas.
