Observation (CORRECTED DURING INSPECTION): 1) Lack of sanitizer solution upon arrival of inspector both in kitchen and in front food preparation area - CORRECTED DURING INSPECTION - Back sink filled and front bucket filled.
2) Staff knew when one knife was cleaned and sanitized but not the other. CORRECTED DURING INSPECTION - Knife cleaned and sanitized upon request of Health Inspector.

Ensure utensils are washed, rinsed and sanitized every 2 hours or more frequently.

Spray suspect rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
