Observation: Significant fruit flies observed near the three compartment sink. Fruit fly traps placed throughout the area. Ensure that fruit fly traps are installed away from food items to prevent contamination.
Corrective Action(s): Call the pest control for re-installing of traps to control the fruit fly issue.

Comments

- General sanitation is good
- Handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All coolers (walk in, undercounter) < or = to 4C
- All freezers (walk in) < or = to -18C
- All hot holding units > 60C
- Cold potentially hazardous food items (ie cheese curds, cold sliced vegetables) at the prep station are stored at room temperature for max four hours while being time monitored. Ensure to properly monitor the turnover period with expiry labels and discard food items accordingly. All food items are labeled with time stamps. All within expiration time.
- Three compartment sink available for manual dishwashing. Sanitizer was available at 200ppm Quat solution to sanitize food contact surfaces.
- Surface sanitizer was available in spray bottles and red buckets with presoaked wipes at 200ppm Quat solution.
- Dry storage area is good. All items are at min 6 inches off the floor.
- One TinCat live mouse trap was placed on the bottom wire rack near the three compartment sink. Place all live traps on the floor and directly against the wall.
