Corrective Action(s): Empty ice bin, then clean and sanitize ice machine, ensuring to scrub all nooks/crevices. Clean and sanitize ice machine on a monthly basis and start a cleaning log.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in bucket for storing wiping cloths was at 50 ppm.
Corrective Action(s): Ensure sanitizer solution in bucket is changed every 2 hours (or sooner if visibly dirty). 100-200 ppm is required for proper sanitizing concentrations.

Observation (CORRECTED DURING INSPECTION): - Scoops were stored directly in dry ingredients, with handles touching the food

- A black garbage bag was being used to cover pizza dough
Corrective Action(s): - Use the scoop holders that are available at the tops of each dry ingredient bin, to prevent handles and reaching hands from contaminating ingredients.

- Garbage bags are not food-grade material and can contaminate food. Use food-grade material for covering/storing food.

*Remove carpet in upstairs staff area, as food storage for the restaurant is located in that area. All surfaces must be non-absorbent and easily cleanable.

- Hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution in spray bottle and in dishwashing sink at 200 ppm - good
- High-temperature dishwasher reached above 71C at plate surface level during rinse cycle
- All coolers were at or below 4C
- All freezer temperatures satisfactory
- Soup/broth was cooling in ice bath at time of inspection - good
- Food storage practices good - all food stored off the floor and covered
- General sanitation good
- No signs of pest activity noted at time of inspection
- Temperature records well maintained
