Observation (CORRECTED DURING INSPECTION): 1. Partially cooked fries are noted at room temperature. One container of fries is measured to be 16.6oC, while the other at 12.9oC. Fries were partially cooked yesterday and brought out to room temperature at 10am (now 12:05pm). No time tracking is implemented.
2. Undercounter 3-door cooler (breakfast station) is measured to be 6.1oC air temperature. Food internal temperatures range from 6.3oC to 7.2oC. No temperature log could be provided, even though staff indicated monitoring and recording are being done. Last temperature log on all coolers indicated was May.
3. Undercounter 2-door cololer (across from breakfast station) is measured to be 8.2oC air temperature. Food internal temperature is measured to be 7.3oC. No temperature log could be provided, even though staff indicated monitoring and recording are being done. Last temperature log on all coolers indicated was May.
Corrective Action(s): 1. All potentially hazardous foods must be time tracked, if storing at room temperature. Fries discarded.
2/3. Potentially hazardous foods must be at 4oC or less in coolers at all times. All potentially hazardous foods discarded.
