Observation (CORRECTED DURING INSPECTION): Surface sanitizer at front and back (in buckets with wiping clothes) at 0.0 ppm at the time of inspection.
The operator stated that a sanitizer didn't changed for 15 days. Please check concentration of a surface sanitizer every day/use test strips.
Corrective Action(s): Immediately. Replace the sanitizer (must be 200ppm of Quat or 100pp of bleach solution)

Routine inspection conducted.

- General sanitation - satisfactory.
- Handwash station in prep area, staff washroom and back area (the 3-compartment sink) are supplied with hot/cold running water, liquid soap and single use paper towels.
- Walk-in, pizza prep & beverages coolers are all measured at less than 4C.
- Upright storage freezer is measured at -19.4C.
- Chest (domestic) freezer at - 21C.
- Hot holding unit (pizza) at 60C.
- Thermometers for cold units and hot holding unit - available.
- 3-compartment sink is available for ware washing, drain plugs are available.
- Food contact surface sanitizer is available in spray bottles (prep. back area) and is measured at 200ppm chlorine concentration.
- No evidence of pests activity is noted.
- Ice-cream freezer - satisfactory (Note: Observed a few ice creams in the freezer).
- Storage - organized (Note: Small amount of food on site observed.)

Friendly reminder: Pizza knives must be kept in a sanitary manner (please no food debris on it) as well as cutting boards on the pizza prep. cooler must be regularly cleaned and sanitized.
