306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Some moldy limes and lemons, grape tomatoes and grapes rolled underneath bread section. Some stains and food residue underneath these racks as well.
2. Mopping and cleaning stations/sections both near milk end and around produce section are cluttered and disorganized. Cleaning equipment not stored in and left in a clean manner.
Corrective Action(s): 1. Clean area under bread storage. Increase frequency or maintain area according to cleaning plan. (Today)
2. Remove unnecessary items from cleaning areas and stations.
Discard moldy cleaning equipment.
Organize cleaning areas so mops and supplies can be stored in a clean and sanitary manner.
Discard any sweeps or mops that have come in contact with contaminated areas or that have cleaned rodent feces (sanitize in between use or when moving from department to department) or are in poor, uncleanable condition.

Observation: Tomatoes (whole, open tray boxes on pallets) stored in meat cooler during inventory and receiving.

Corrective Action(s): Check with your food safety plan, procedures on spoilage and storage. Although there is no direct contamination, fresh foods such as tomatoes should not be stored in meat cooler. Move to its own space.

Inspection conducted in all Departments.

Coolers were all working at the time of inspection. All coolers were below 4C.
Sushi display cooler was initially at 8C at the beginning of inspection (bottom) but returned to 4C surface temperature near the end. Possible defrost cycle. Monitor the temperature of cooler and rotate if necessary (middle section was consistently the lowest temperature, 1.4C-4C).

Milk/Dairy coolers <4C.
Egg coolers <4C.
Meat coolers <4C.
No meat items past best before.
Ready to eat processed meat sections <4C.
Cheese sections and other ready to eat food items <4C.

Freezers: horizontal display freezer for shrimp, prawns, lobsters and seafood - this is between -10C to -17C, may be on a cycle - check and ensure this cooler is below -18C and monitor the temperature over time.
All other freezers <-18C.

Pest control traps in place at most entrances.
No signs of pests at the time of inspection.

Staff and public washrooms appear clean and fully supplied for hand hygiene.
