Observation (CORRECTED DURING INSPECTION): A large pot of beef stew at 2-door undercounter cooler next to grill at 63 deg C
Corrective Action(s): Improper cooling. It will take too long for the stew to cool down health safely.

Proper cooling:

Step 1: 60 deg C to 20 deg C within 2 hours using ice bath and/or ice wands
Step 2: 20 deg C to 4 deg C within 4 hours in the fridge

Observation: Some hard-to-reach areas under counters in kitchen have food debris
Corrective Action(s): These areas must be cleaned at least weekly or as needed

Observation: Operator is using the next door karaoke premise as extra storage space for dry goods. 2 Rooms are being rented for this purpose. Boxes and foods are stored on the ground

-Daily Temperature and Cleaning Sanitizing logs are not being maintained
Corrective Action(s): Store the foods off the ground on shelves >15cm off the ground -obtain more multi-level shelving units here

-Operator should be checking and logging at least once a day all dishwashers, fridges and hot held equipment for proper results
