Observation (CORRECTED DURING INSPECTION): A) Quats sanitizer at dispenser measured 0 ppm. Drained, primed and refilled sink. Repeated test with same result.
B) Using sani-bucket (for sanitizer only) for detergent use. Staff must have sanitizing solution available in front to ensure surface sanitizing of tables and display.
Corrective Action(s): Discontinue use of automatic quats dispenser until it is serviced by professional. Switch to bleach use as discussed and follow instructions on dishwashing signs to achieve 100 to 200 ppm chlorine solution.
Ensure staff are properly trained to use containers and sanitizers properly.
