Observation (CORRECTED DURING INSPECTION): Two preparation line coolers were measured to be above 4C. Staff used trays with ice to cool food down to 4C or lower before maintainence person comes in.
Corrective Action(s): Temperatures for all coolers must be routinely monitored to ensure that they are 4C or lower.

Routine inspection:

- Hot/cold water, liquid soap, and paper towel available
- Low temperature chemical dishwasher reached 50ppm at plate surface
- 100ppm chlorine sanitizer available in sanitizer bucket for food contact surfaces
- Dairy, soda, and walk in cooler were 4 C or lower; small preparation cooler near walk in cooler was not in use
- All freezers were -18C or lower
- All hot holding units were 60C or higher
- Ice machine was maintained in good condition; ice scoop was maintained in a sanitary manner
- No evidence of pest activity was observed during inspection
