Observation: Wood shelving in parts of the premises suffering deterioration to varying degrees. Fermentation room shelves in very bad shape and particle board shelves flaking wood. This could contaminate the food (wine).
Corrective Action(s): Prioritize replacement of the fermentation room shelves as they are in worst condition. Continue to replace and/or seal the shelves in bottling area depending on degree of deterioration on long term replacement plan.

Operator will review the sulphite-based disinfectant dilution process based on manufacturers instructions. Verify the "scoop" volume.
