Observation (CORRECTED DURING INSPECTION): Sandwich display cooler is at 7.9 C (air temperature) and 7.1 C (food temperature).
Corrective Action(s): Sandwiches are made fresh daily. Move all potentially hazardous foods (sandwiches, cheesecake, sausage rolls, samosas) to an alternate cooler so that they will be stored at 4C or colder. Do not store any potentially hazardous foods in this cooler unless it can keep them at 4 C or colder and have adequate air flow to all shelves.

Observation: There is no hot water or paper towels at the staff washroom hand sink. Apparently the hot water tank was leaking.
Corrective Action(s): Provide hot water at the staff washroom hand sink. Until hot water is provided, lock staff washroom and have staff use the customer washroom which does have hot and cold running water, liquid soap and paper towels.

Routine check:
Kitchen hand sink has hot and cold water, liquid soap and paper towels.
Milk and back kitchen upright coolers are at 4 C or colder.
Dishwasher has a hot water sanitizing rinse (71 C measured inside of the machine and gauge shows 82 C) - good.
Chlorine is used to sanitizie wiping cloths.
Follow a routine cleaning schedule - clean under equipment and remove and unneeded items.
