Observation: Fruit flies observed in the back kitchen at the time of inspection.
Corrective Action(s): Improvement in overall sanitation required. Correction order related to sanitation improvement issued.

Observation: 1. (Repeat violation) Poor sanitation noted in the kitchen. Food and grease buildup behind the cook line is a major concern, as no improvement is noted. Observed food debris throughout the facility, especially hard-to-reach areas (e.g., under the shelves). Back of the main cook lineis also to be cleaned and sanitized three times a week.
2. Floor tile regrouting is needed in some areas (e.g., next to the mixer in the dim sum station) as the deep gap was collecting soiled water.
3. (Repeat violation) The back door was wide open at the time of inspection. The back door remained open when shipments were not actively being delivered. When closed, a gap in between doors was observed.
Corrective Action(s): 1. Improve overall sanitation. No organic matters, standing water or grease build-up to be readily available for pests. Correct this by: 1 week.
2. Regrout floor tiles as needed. No gaps should be deep enough to hold soiled water. Correct this by: 1 week.
3. Back door to be closed when not in use. Gap notified in between door to be sealed. Correct this by: 1 week.

Follow up inspection to the report JGUU-CSQRSP conducted.

Little to no improvement was noted regarding overall sanitation in the kitchen.

Standing water, grease and organic matter build-ups are still a huge concern. The most recent pest report also indicated a sanitation issue.

A correction order is issued to address the sanitation issue. Failure to comply with the order will result in a violation ticket.

A follow up inspection to be conducted a week from this day.
