Upright cooler has been repaired, but also the operator has purchased a new one and it will be installed today
Sanitizer buckets are available at both the sushi prep area and the back cooking area - ensure that sanitizer is used frequently on the cutting boards, knives and surfaces
Handsinks were free at time of inspection - please do not use handsinks for defrosting any food or storing food containers

Discussed cooling of chicken that is being pre-cooked for food service at lunch and dinner - please update your food safety plan to reflect an approved practice for cooling of foods. Using the prep cooler is not recommended for the volume of food you are attempting to cool in the prep cooler.
