209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
Found an open tin of oyster sauce in the dry storage room. Open tin cans of food will cause rust to develop in the tin can, and this will get into food. Chemical contamination of the food may occur causing people to become ill.
Corrective Action(s):
Transfer the oyster sauce into a food grade containers and cover it with a lid, saran wrap or aluminum foil. Staff completed this during the inspection.

304 - Premises not free of pests [s. 26(a)]
Observation:
Found mice droppings on the floor, along the base of all walls in the kitchen, dry storage room and in the dim sum kitchen; and on shelves in the waitress areas. A professional pest company has been contracted to eliminate the problem and services the premises once a month. Reviewed the pest reports.
Corrective Action(s):
The following actions must be taked to eliminate the mice problem:
1) Immediately clean up all the mice droppings and sanitize with bleach and water.
2) Every morning and before leaving at night, the floor under all tables & equipment must be cleaned. Move all items off the floor and move them away from the wall so the floor can be cleaned.
3) Continue having the premises serviced by a professional pest company.

Observation:
1) There is food debris and grease accumulated on all walls under and behind tables and equipment. The food debris and grease will attract pests.
2) The exhaust canopy filters have accumulated grease on them. The grease will attract pests.
Corrective Action(s):
1) Clean all walls beneath and behind all tables and equipment. Ensure this is done every week.
2) The exhaust canopy filters must be removed and cleaned by staff. Ensure this is done every week.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1) Found aluminum foil covering the side of the dim sum stove, and behind the flat bread toaster/cooker in the kitchen. Aluminum foil is not durable, sealed or cleanable. Food debris found on the foil will attract pests.
2) Aluminum foil was covering the inner lid of the chest freezer in the dim sum kitchen. Aluminum foil is not durable, sealed or cleanable. Pieces of the aluminum foil could fall into food, and it can't be cleaned.
3) The hot water tap, of the 2-comp prep sink, has a nail as the handle. The nail is not food grade or intended to be a tap.
4) The inner surfaces of the upright freezer, by the dishwasher, are cracked and chipped exposing the insulation. The surface is not durable, smooth, sealed or cleanable.
Corrective Action(s):
1) The aluminum foil covering the surfaces shall not be used, OR it must be removed and thrown away at the end of the night. In the morning, new aluminum foil must be installed as it is not cleanable. During the inspection, staff agreed to do this tonight.
2) Purchase a new chest freezer lid or a new freezer so the inner lid is durable, smooth, sealed, and cleanable.

3) Install a proper hot water tap on the 2-comp prep sink, so the hot water can be open and closed properly.
