A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezer was -20C; hot holding was 66C (pizza held 45 minutes and then discarded); and thermometers present.
- Quats sanitizer present and strength of 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy and filters are clean. Book a professional company to clean the exhaust canopy and chimney to remove accumulated grease and food. This should be done yearly.
- No signs of pests.
- FoodSafe certified staff present.
- Discussed with owner that replacement of the plastic, corrugated covers (for pizza dough) shall be done slow. The covers must be food grade, durable, smooth, sealed and cleanable. Speak with food equipment suppliers for appropriate substitute covers.
