Observation (CORRECTED DURING INSPECTION): Operator did not have adequate bleach sanitizer available on-site (ran out of bleach). Operator was able to access addition bleach from gas station staff.
Corrective Action(s): Ensure there is adequate sanitizer available at all times during operation.

209 - Food not protected from contamination [s. 12(a)]
Observation: Prepped onions were being stored in milk crates in the walk-in cooler. This is not an acceptable food grade storage container. Operator discarded onions. Also, fly control device found to be installed above pizza prep counter. This is unsanitary as flies can end up in food products and lead to contamination. Also personal items such as cellphone, chargers and personal drinks found in food prep area. This is unsanitary practice.

Corrective Action(s): Ensure all prepped foods stored in proper food grade containers and covered to protect product from contamination. Ensure fly control device stored away from food and food storage areas. Ensure food prep and storage area is free of all personal items to protect food from potential contamination.

Observation: Build up of grime/debris found throughout food and food storage areas (on shelving, under equipment, floors and baseboards). This is considered unsanitary.
Corrective Action(s): Ensure all areas of the kitchen and storage cleaned/sanitized regularly to maintain sanitary conditions at all times.

*Hand washing station equipped with liquid soap and paper towel.
* Chlorine sanitizer was at 200ppm in sanitizing buckets used to store wiping cloths; operator ran out of bleach during inspection but was able to borrow from the gas station.
* Freezer unit found to be -18C or colder
* Cooling units were found to be 4C or colder
* Hot-holding pizza unit was 60C/140F or hotter
* Monitoring records (temperature/cleaning) available and up to date.
* Note: Cleaning of facility to be done to remove build-up of debris and grime.
* Note: Operator to provide food grade containers for storage of food items.
* Note: Ensure all hand sinks are accessible and free of clutter.
* Follow up inspection to be done April 30, 2018.
