Corrective Action(s): Turn up hot holding on gravy. Replace rice cooker - broken lid clamp is allowing heat to escape and unit is not able to maintain hot rice above 60C.

Observation (CORRECTED DURING INSPECTION): 1. Improper dishwashing occurring at time of inspection - one sink had both soapy water and sanitizer mixed for dishwashing.
2. no Sanitizer being used on cutting boards or customer tables.
Corrective Action(s): 1. you must follow the 3-compartment sink dishwashing method - wash, rinse, sanitize.
2. you must use sanitizer on customer tables and frequently on cutting boards and food contact surfaces. Store wiping cloths in bucket of sanitizer, changed frequenty.
