Coolers are at 4 C or colder (except juice/pop only cooler) - good.
Reviewed procedures for hollandais sauce and gravy.
Reviewed cooling and defrosting procedures.
Cooked turkey procedures reviewed (unstuffed) - Check 74 C or hotter in thigh and thickest portion. Use a metal stemmed probe thermometer.
No advanced pooling of eggs. Eggs cooked to order - good.
Handwashing sinks in kitchen, server area, and both washrooms have liquid soap and paper towels.
Dishwasher has a final hot water sanitizing rinse - temperature satisfactory.
Chlorine bleach (100ppm + ) is available for sanitizing food contact surfaces and wiping cloths.
Kitchen sanitation - good.
