Observation (CORRECTED DURING INSPECTION): Sliced fruit and Cool Whip in the toppings cooler were measured at a temperature of 13-14 C.
Corrective Action(s): Moved to other coolers. Ensure perishable items are kept out of this cooler until it has been fixed/repaired.

Observation: Self-serve toppings cooler is not maintaining food at a temperature of 4 C or colder. A small number of toppings are not shelf-stable, and require refrigeration.
Corrective Action(s): Have the cooler serviced/adjusted to maintain 4 C or colder by tomorrow (21st December 2016). Call for reinspection once fixed.

Observation: Staff member on site could not provide proof of having taken Food Safe Level 1, or an equivalent food safety training course. This is a repeat violation.
Corrective Action(s): Ensure copies of certificates are available for review on site by next month (20th January 2017). At least one person with this training must be working on site at all times - have additional staff trained if this cannot be maintained.

*General sanitation satisfactory. No pest issues observed during inspection.
*Full 3-compartment warewashing methods are in use for containers and utensils.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*Quat sanitizer available at 200ppm in spray bottles and dish sink. Dispenser functioning at correct strength.
*All topping bins equipped with lids and spoons.
*Walk-in cooler and freezer temperatures satisfactory.
*Yoghurt machines are cleaned out at a frequency of 1 machine per day. Full cleaning and sanitizing performed.
*Yoghurt machine hopper temperatures at or below 4 C.
*Food stored off the floor and protected from contamination.
*Follow-up inspection required - contact area inspector once cooler has been fixed and/or adjusted.
