Observation: One of the bar hand sinks was out of order. Note that there was another sink nearby that could be used in the meantime.

Comments

-Store utensils in ice, not in a sanitizer solution. Discussed with the head chef.
Hand washing sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
All glasswashers (4) had 12.5- 25 ppm Iodine.
Kitchen dishwasher had 100 ppm chlorine. Ensure that daily records are kept.
Sanitizer bottles had 200 ppm quats.
No evidence of pests, pest control report available.
General sanitation was satisfactory.
