Follow up inspection:

Pest Control:
-Affected areas were cleaned to remove rodent droppings.
-Food containers were covered.
-A pest control operator from Steritech is expected to conduct a visit today. Provide the district E.H.O. a copy of the pest control visit via email.
-Continue checking for droppings/holes/ripped food, clean floor on a daily basis, sanitize all food contact surfaces prior to use, seal off all entry points, and cover equipment overnight.

Temperature Controls:
-Cake cooler was at 3.5 degrees C (4 degrees C / 40 degrees F or less).
-Cooler for buns with protein fillings was at 3.7 degrees C ( 4 degrees C / 40 degrees F or less). This display cooler was equipped with two accurate thermometers.
-Hot-held egg tarts were above 60 degrees C / 140 degrees F.

Sanitizer:
-200 ppm QUATS sanitizer was available in the buckets.
-In use knives were not being stored in sanitizer between use.
