- All hand wash station equipped with hot/cold running water, soap and paper towels
- All coolers 4C or less
- All unrefrigerated toppings on 2/4hr room temperature holding rule.
- Freezers -9C to -21C (Ensure all frozen potentially hazardous foods are stored at -18C or less)
- All hot holding greater than 60C (fries, patties..etc)
- Temperature logs maintained up to date
- Probe thermometer available to check internal food temperatures. Ensure probe is sanitized between uses.
- Quat sanitizer with cloths submerged 200ppm. Quat test strips available.
- High temperature dishwasher achieved 71C (as per thermolabel)
- All foods appeared protected (ie. stored off the ground, covered...etc)
- Good general sanitation. No signs of pest activity at time of inspection.
