Observation (CORRECTED DURING INSPECTION): Chemical dishwasher unable to produce 50 ppm chlorine concentration during the rinse cycle upon initial run.
Corrective Action(s): Operator primed the machine for approximately 3 min until the sanitizer feed was working and was able to produce 50 ppm chlorine at the 3rd run. Ensure to check sanitizer concentration regularly for the chemical dishwasher and continue to monitor and document sanitizer concentration daily.

Observation (CORRECTED DURING INSPECTION): Utensils observed to be kept in warm water baths (44C) at the time of inspection.
Corrective Action(s): Operator removed all utensils to be cleaned and sanitized at the time of inspection. Ensure utensils are either kept in ice water bath or dry conditions to prevent possible bacterial growth.
