Observation: - Heavy grease and/ or dirt/ and/ or food accumulation noted in following areas:
- Under and behind pizza oven table.
- Entire wall under kitchen exhaust canopy behind pizza oven table.
- Under, behind, and between front cooking line equipment (grill, stove, deep fryers).
- Front cooking line exhaust canopy above equipment.
Corrective Action(s): - Remove grease and thoroughly clean the above noted areas. [Correction Date: October 20, 2017]

Note:

- Staff were aware of the problem and advised that servicing has been scheduled. Servicing company is currently waiting for a part that is needed for repairs.
- Staff are temporarily addressing the problem by storing minimal amounts of food in inserts submerged in ice. No concerns with food temperatures at time of inspection.

- Wiping cloths stored in 100 ppm chlorine bleach solution.
- Low Temperature Sanitizing Dishwasher: 50 ppm chlorine residual. Daily sanitizer records appear maintained and up-to-date.
- Pest monitoring glue traps placed throughout premises. No signs of pest activity at time of inspection.
- FOODSAFE requirements satisfied at time of inspection. Discussed upcoming FOODSAFE expiry (December 2018) with manager.
