Observation (CORRECTED DURING INSPECTION):
- One spray bottle has no detectable sanitizer.
- Sanitizer from one other spray bottle and from the dispenser measured at 400ppm QUAT - this is too strong.
Corrective Action(s):
- Ostro San is in use for QUAT based sanitizer. Fix the source dispenser so that the final dilution of 200ppm is reached. All bottles were diluted with water to reach 200ppm QUAT. Test strip is available.

Observation (CORRECTED DURING INSPECTION):
- Handwashing station by ice machine obstructed with left over fruit tray.
- Handwashing station by the kitchen entrance had no paper towel. It appears that the paper towel was stuck in the dispenser.
Corrective Action(s):
- Ensure handwashing stations are fully equipped with hot and cold running water, paper towel and liquid soap in dispensers at all times. Corrections were made at the time of inspection.

Observation (CORRECTED DURING INSPECTION):
- Package of fresh beets observed underneath raw beef in walk-in cooler.
Corrective Action(s):
- Do not store raw meats above fresh vegetables. Beets were moved to other spot with no risk of contamination at the time of inspection.

Observation:
Premises has rebranded to "Acqua Restaurant, Patio and Bar" and menu change has occurred without approval. Current food safety plan is outdated.
Corrective Action(s):
- Current Food Safety Plan is outdated. Submit an updated version with current menus to the undersigned by Oct 10, 2022.

Observation:
Notable fruit fly acitivty by the mop sink area.
Corrective Action(s):
- Ensure to clean the mops before shift ends. Clean the drain (drain treatment is suggested).

Observation (CORRECTED DURING INSPECTION):
Back door was open upon the entrance of the inspector inside the kitchen.
Corrective Action(s):
- Ensure the door is closed at all times. Installation of well-fitted door screen is an option if door needs to stay open for air circulation etc.

Observation:
- Debris build up observed on dishwasher curtains.
- Dust build up observed arount the ceiling vent inside kitchen.
- Webs and dust build up observed on shelving racks in dry storage room.
- Dust build up observed on lower counter shelves.
Corrective Action(s):
- Ensure to clean the areas noted above.

Comments

- Staff washroom sinks are fully equipped.
- All coolers at 4C or below.
- Walk-in freezer at - 13C.
- Vent hood panels in sanitary condition.
- Temperature logs are maintained.
- Ice scooper stored in a designated holder. Ice machine is cleaned every 2 weeks as per the person in charge.
- High temperature dishwasher reached 71C or above during the final rinse.
- Monthly pest monitoring by professional pest control company as per the person in charge. Ensure to provide the most recent report to the undersigned.

*Raw oysters are not being offered at this time. Ensure to have raw oyster advisory signs on menu before starting to serve them again.
