- Temperature Control: No concerns noted this date. Temperature logs reviewed. (Two separate logs on site)
- Mechanical Dishwasher: Low Temp - chlorine: Ok. Ensure all food contact surfaces are to be cleaned and disinfected after use or on a timely manner. (As discussed - spatulas/tongs, knives, etc. every 4 hours) All cleaned items are to be stored in a sanitary manner. (ie: hanging)
- Commercial self serve units are to be cleaned and disinfected as per manufacturers procedures.
- Wiping cloth storage: Limit the amount of cloths used at any given time. Cloths are to be kept completely submerged in a sanitizer at all times. Monitoring required. Solution is to be changed on a routine basis.
- Food Storage: Thawing procedures discussed. (Frozen food items are to be thawed: In a microwave, in a refrigeration unit or under running water.) Staff training is to be conducted.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Sanitation: Facility is to be kept clean and organized. All items are to be stored in designated areas. (ie: pot cleaners) Broom/mop hangers discussed.
- Equipment: Oven is currently being serviced. Glasswasher not being used. Discussed removal of dishwasher to free up storage space.
- Pest Control: Monitoring program on site. Copy of Pest Control reports are to be kept on site, for review.
- Garbage, Recycling and Composting Disposal: Ok.
- Ice Machine: Cleaning and disinfection discussed.
- Food Safe: Trained staff on site.
- Corporate Food Safety plan and Sanitation Plan is to be kept on site for reference. Staff are to be properly trained.
