Observation: 1. Glass washer does not have water or sanitizer coming out of the rinse side.
2. Found wire strainer to be heavily frayed and missing pieces of wire
Corrective Action(s): 1. Have glass washer repaired or replaced so the water flows on the rinse side. ensure iodine is 12.5 to 25 ppm in the rinse water.
MUST wash ALL glassware in kitchen dishwasher until glass washer is repaired. Call for inspection when complete.
2. Discard all broken or worn equipment to prevent pieces from contaminating food.

Comments

- Coolers were 4 C or colder
- Freezers were -18 C or colder
- No hot holding at time of inspection
- Hand sinks had liquid soap, paper towel, hot and cold water
- Spray bottles had 200 ppm quat
- Dishwasher had a final rinse of 100 ppm chlorine
- A few droppings noted under dishwasher. Pest control comes in monthly, have them reassess under dishwasher as no droppings noted any where else and may be old droppings .
- General sanitation is satisfactory, a little cleaning behind deep freezers and under dishwasher.
NOTE: hole under dishwasher has been repaired from previous report. tiles have been placed behind mixer. Ceiling has been repaired, however appears to have more water damage and the board used for repair is not flush with the ceiling leaving possible entry points for pests.
