Corrective Action(s): Ensure all food is cooled in an acceptable manner. Cool by splitting into smaller portions, shallow containers, and/or using ice wands.

Observation (CORRECTED DURING INSPECTION): Trays and tubs used for food storage observed stored on the floor in the back area storage area.
Corrective Action(s): Ensure all utensils and food equipment are stored in a sanitary manner at all times. Do not store on the floor. Operator has rewashed all trays and tubs in the low temperature dishwasher.

Corrective Action(s): Ensure all food containers are stored in food grade containers with tight fitting lids. Do not store food products on the floor. Ensure all food is protected from contamination at all times. Correct immediately.
