Observation: During time of inspection, the following was observed:
1. commercial fume hood still requires professional cleaning
Staff are also responsible for cleaning baffles/ slats between professional cleanings
2. Some droppings found underneath shelving and behind dough mixer
Corrective Action(s): 1. Ensure that canopy is maintained in good sanitary condition
Employ professional cleaning and staff cleaning as required for canopy
2. Ensure that daily thorough monitoring and cleaning done throughout facility

Comments

Follow up inspection conducted to MTRG-AWCUZ3.
The following issues were corrected on or before this inspection.

- Hot holding units hot holding food inserts >60C during time of inspection.
- Low temperature dishwasher dispensed at least 50ppm chlorine residual during final wash.
- All shelving upstairs has been moved and all droppings upstairs removed
- Upstairs storage areas has been organized/ decluttered and any affected items must be discarded
- All entry points must be plugged/ sealed with drywall compound
- New pest control service/ assessment must be done, operator has invoices and will keep a record of service.
- Facility has undergone thorough cleaning
- Cooler door for pizza prep cooler has been repaired.
