Observation (CORRECTED DURING INSPECTION): Staff member on duty were not able to demonstrate the proper washing, rinsing, and sanitizing procedures in accordance to the 3-compartment sink method. No sanitizing was available at the time of inspection. Staff member presented Windex as the general cleaning/sanitizer. Staff member was shown how to dilute a 100ppm chlorine solution.
Ensure all wiping rags are stored in an approved sanitizer.

Observation: Metal wire bristle brush used for cleaning panini grill found within storage cabinet. As mentioned on previous inspection reports, metal bristle brushes cannot be used for cleaning food equipment due to the risk of physical contamination. Metal brush was discarded.
Large white and green cutting boards are heavy scored and cannot be adequately cleaned. Black mildew marks were noted on both of the cutting boards. Discard and have both of the cutting boards replaced.

Comments

Routine inspection conducted and the following were noted:
Walk-in cooler and salad cooler least than 4C.
Walk-in freezer at -18C
Hot holding of food products was at least 60C.
No sign of pest noted.
Food items stored at least 6 inches off the ground and properly covered.

Note:
Front salad topping cooler had an ambient air temperature of 8C. Internal temperature for food products were between 6C to 7C. Continue to monitor cooler to ensure foods are less than or equal to 4C. Unit may need to be adjusted to a lower temperature to accommodate the frequent opening.
